Best Oven-Fried Chicken

Ingredients

1 cup bread crumbs
1/4 cup Parmesan cheese
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon fresh thyme, minced
1/2 teaspoon fresh oregano, minced
1 teaspoon fresh basil, minced
2 teaspoons paprika
Fresh ground pepper and salt (or salt substitute) to taste
2 eggs
2 egg whites
1 teaspoon hot pepper sauce
1-1/2 pounds boneless, skinless chicken breasts, halved
3 tablespoons olive oil

Directions

Preheat oven to 350°. Combine bread crumbs, Parmesan cheese and spices in a plastic bag. In a shallow bowl, beat eggs and egg whites. Add hot pepper sauce. Dip chicken breasts into beaten eggs. Roll in bread-crumb mixture. Spread chicken breasts out on a cookie sheet. Drizzle olive oil on each chicken breast. Bake for 30 to 35 minutes, or until no traces of pink remain.
