Oatmeal Raisin Cookies

Ingredients

2 cups old-fashioned oats
1-1/2 cups all-purpose flour
2/3 cup raisins
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon salt
3/4 cup unsweetened applesauce
1/3 cup packed brown sugar
1/3 cup granulated sugar
1 large egg or 2 egg whites or 1/4 cup egg substitute
3 tablespoons canola oil
1-1/2 teaspoons vanilla extract

Directions

Preheat oven to 350°. In a large bowl, combine oats, flour, raisins, baking soda, cinnamon, nutmeg and salt. In a medium bowl, stir together applesauce, sugars, egg, oil and vanilla. Add to flour mixture and stir well. Drop by 2-tablespoon scoops, about 2 inches apart, onto parchment-lined or cooking-spray-coated baking sheets. Bake about 12 minutes until golden brown. Transfer cookies to a wire rack to cool. Store in airtight container up to 3 days.
