Overnight Coleslaw

Ingredients

4 cups cabbage (green or purple or a mixture), shredded
2 cups carrots, shredded
3/4 cup scallions, sliced
3/4 cup unsweetened apple juice
2/3 cup cider vinegar
1-1/2 teaspoons paprika
1 teaspoon mustard seeds
1/2 teaspoon garlic powder
1/2 teaspoon celery seeds
Fresh ground pepper
1 tablespoon dry mustard

Directions

Combine cabbage, carrots and scallions. Combine remaining ingredients in a blender; pour over cabbage mixture. Toss to coat. Refrigerate overnight. Serve chilled.
