Sweet Potato and Apple Latkes
(American Diabetes Association Vegetarian Cookbook. )
2 medium sweet potatoes (yams) peeled and diced.
2 Granny Smith apples peeled cored and grated
2 teaspoons lemon juice
2 tablespoons fat free sour cream
½ cup fresh breadcrumbs
1/3 c. chopped walnuts
1 teaspoon cinnamon
½ teaspoon ground cloves
Canola oil spray for sautéing.
1. Place potatoes in a saucepan with water to cover. Bring to a boil and cook 8 minutes until tender. Drain and mash in a blowl Add apples, lemon juice, sour cream, egg, breadcrumbs, walnuts, cinnamon and cloves. Stil until smooth and thick. Mixture should hold together well on the end of a spoon.
2. Using a tablespoon or small ice cream scoop dipped in water scoop dollops on a large plate or pan sprayed with canola oil. Flatten the mounds slightly.
3. Heat a large nonstick skillet sprayed with canola oil over mdium high heat. Add 2-3 latkes at a time.
4. Cook 3-4 minutes on one side until browned. Turn and brown on other side.
Serve warm with applesauce or fat free Greek yogurt or both. This recipe makes about 20 latkes
