Recipe: Pasta with Pumpkin

​​Spaghetti with Creamy Pumpkin Sauce

Yes, pumpkin! While pumpkin is usually associated with sweet dishes it works well as a savory dish and melds wonderfully with parmesan cheese. Pumpkins are full of essential nutrients including Vitamin A, lutein and zeaxanthin which may protect your eyesight.

1 cup sun dried tomatoes packed in oil
1 onion, chopped
2 cloves garlic, minced
3-4 sage leaves, minced or 1 tsp. dried sage
1 1/2 cups pumpkin puree
1 cup tomato sauce
4 cups chicken broth
1 teaspoon dried basil
1/2 cup cream or half and half
Pinch of cinnamon

8 ounces spaghetti
1 onion, thinly sliced
1 tablespoon chili powder
1 teaspoon garlic powder
Parmesan cheese for topping

Sauce: In a large pot over medium high heat, add the sun dried tomatoes and a few tablespoons of the oil. Add the onion, garlic, and sage with the sun dried tomatoes and saute until the onions are translucent. Add pumpkin puree, tomato sauce, chicken broth, basil, and cinnamon and saute for 10 minutes. Take off the heat, puree sauce in a blender or food processor until smooth. Return to the saute pan and on low heat, stir in cream and a ladel of the pasta water.Add salt & pepper to taste. Toss the sauce, and pasta together.
